Tasty Tuesday: Black Bean Brownies

Do you have a toddler who yells while you are making dinner “I’M HUNGRY” then come dinner time he/she doesn’t eat anything?  Please tell me I’m not alone in the battle of dinner… Well today’s recipe features something hidden and sneaky in something I’m sure any toddler will eat.  Black beans in the brownies!!  This makes for a pretty fudgy and moist brownie and you can’t even tell that the main ingredient is black beans.  My kids ate them all up with a glass of milk and I ate a couple too 🙂  Enjoy!

As a side note, I used a mini muffin tin.  If you want to use a normal sized muffin tin I would increase cook time by 10 minutes.

Trying to sneak in some extra protein in your kids diet? Try this simple black bean brownie recipe, they will have no idea you've snuck it in 🙂

Ingredients

15 ounces canned black beans (drained and rinsed)

9 tablespoons unsweetened cocoa powder

¼ cup all-purpose flour

1 teaspoon baking soda

⅛ teaspoon salt

1 cup granulated sugar

1 egg

4 ounces applesauce (use a snack size one)

1 teaspoon vanilla extract

Directions

Preheat oven to 350 degrees.

In a food processor or high speed blender, blend black beans until they form into a smooth paste.

Add in cocoa powder, flour, baking soda, and salt. Pulse the food process a couple more times to combine.

Then add in sugar, egg, applesauce and vanilla. Run the food processor until everything is completely mixed together.

Spoon mixture into a mini muffin pan. Filling each ¾ full.

Bake for 15-20 minutes, or until the brownies are set, pull away from the side of the pan, and a toothpick inserted in the center comes out clean.
